Wonder Rajma
INGREDIENTS
For pancakes
- 1 cup rice flour
- 3 green chillies chopped
- 1 teaspoons coriander leaves
- Water as needed
- Salt to taste
Red bean stuffing
- 1 cup kidney beans boiled
- 1 green bell pepper cubed
- 1 yellow bell pepper cubed
- 2 spring onion bulbs
- 2 tomatoes chopped
- 5 garlic pods
- Few coriander sprigs
- Salt and pepper to taste
Cucumber salsa
- 1 cucumber chopped
- 1 zucchini chopped
- 2 tomatoes chopped
- 3 mint springs
- 2 basil leaves
- Salt and pepper to taste
METHOD
- Combine rice flour and water to make a batter. Season with salt, pepper, chopped chillies and coriander leaves. Allow this mixture to rest for about 5 minutes. Then heat a non stick pan and pour some oil in it. Spread a ladle full of batter in the pan and spread it to form a thin pancake. Cook on both sides and then take off the pan.
- Make a paste with the boiled kidney beans using a food processor.
- Heat some oil in a pan and saute some onions, garlic and spring onions in it. Add the tomatoes, and yellow and green bell peppers. Add in the ground kidney beans, season with salt and pepper and cook for about 5 to10 minutes.
- To make the cucumber salsa, combine all the ingredients in a bowl and mix well.
