Khichu
Ingredients
- Rice flour – 1 cup
- Water – 3 cups
- Cumin seeds – ½ teaspoon
- Green chilies – 2, finely chopped
- Cilantro – 4 sprigs, finely chopped
- Baking soda – ⅛ teaspoon
- Salt – to taste
- Oil – to drizzle on top
Instructions
- In a non-stick pot, boil 3 cups of water on medium heat.
- Once it comes to boil add cumin seeds, green chilies, chopped cilantro leaves, baking soda and salt.
- Let it boil for 3 minutes.
- Then slowly add rice flour while stirring continuously using wooden spoon. So there will no lumps. (for that you need to stir vigorously)
- Lower the heat to low, cover it.
- Cook it for 9 minutes. Stir in between twice.
- Drizzle some oil on top. Serve hot.
