Khichu

Ingredients
  • Rice flour – 1 cup
  • Water – 3 cups
  • Cumin seeds – ½ teaspoon
  • Green chilies – 2, finely chopped
  • Cilantro – 4 sprigs, finely chopped
  • Baking soda – ⅛ teaspoon
  • Salt – to taste
  • Oil – to drizzle on top



                          

Instructions
  1. In a non-stick pot, boil 3 cups of water on medium heat.
  2. Once it comes to boil add cumin seeds, green chilies, chopped cilantro leaves, baking soda and salt.
  3. Let it boil for 3 minutes.
  4. Then slowly add rice flour while stirring continuously using wooden spoon. So there will no lumps. (for that you need to stir vigorously)
  5. Lower the heat to low, cover it.
  6. Cook it for 9 minutes. Stir in between twice.
  7. Drizzle some oil on top. Serve hot.
