VADI BAINGAN


INGREDIENTS

  • 4 tbsp desi ghee
  • 2 tsp cumin seeds
  • 2 tsp chopped green chilli
  • ½ tsp turmeric powder
  • ¼ tsp asafoetida
  • 5 small finely chopped brinjals(soaked in water)
  • ¾ tsp mango powder
  • 2 small deseeded finely chopped tomatoes
  • Salt to taste
  • 1 ½ tbsp finely chopped coriander
  • 500 gm daalVadiyan
For garnish
  • Chopped coriander
  • Mango powder

METHOD

  • Heat ghee in a pan. 
  • Add cumin seeds, chopped green chillies, turmeric powder, and asafoetida to fry.
  • Now add chopped brinjals in the pan and toss them. 
  • After fried, add mango powder, and finely chopped tomatoes to fry.
  • Add salt, finely chopped coriander, and water in the pan, cook them for 1 - 1 ½ minutes.
  • After cooked put vadiyan in the pan and cook them for 2 - 3 minutes.
  • Serve it with chopped coriander and mango powder.
  • Your Vadi Baingan are ready.
