How to make Chicken or Murg kabab:</h1>

<li style="list-style: decimal; margin: 0px 0px 6px; padding: 0px;">Dilute the cornflour in 1 cup of water and keep the mixture aside.</li>
<li style="list-style: decimal; margin: 0px 0px 6px; padding: 0px;">Clean the chicken in normal running water and cut into medium size chunks.</li>
<li style="list-style: decimal; margin: 0px 0px 6px; padding: 0px;">Marinate with salt, black pepper and vinegar for about 15 minutes.</li>
<li style="list-style: decimal; margin: 0px 0px 6px; padding: 0px;">Add cornflour mixture, curd, ginger, garlic and green chillies.</li>
<li style="list-style: decimal; margin: 0px 0px 6px; padding: 0px;">Mix well and add 1 tbsp ghee.</li>
<li style="list-style: decimal; margin: 0px 0px 6px; padding: 0px;">Cover and refrigerate for about 8-10 hours.</li>
<li style="list-style: decimal; margin: 0px 0px 6px; padding: 0px;">Melt the remaining ghee in a pan.</li>
<li style="list-style: decimal; margin: 0px 0px 6px; padding: 0px;">Slowly add the pieces of chicken on high flame.</li>
<li style="list-style: decimal; margin: 0px 0px 6px; padding: 0px;">Fry until chicken pieces turn into golden brown in color.</li>

<li style="vertical-align: top;">Add the sugar little by little (2 tablespoons at a time) to the mango mixture and stir continuously using a spoon or a whisk till all the sugar is nearly dissolved. The entire process will take about 30 to 35 minutes.</li>
<li style="vertical-align: top;">Heat a pan, add the mango and sugar mixture and go on stirring over a very slow flame till the sugar has dissolved completely and small bubbles appear on the surface of the mixture (approx. 3 to 4 minutes).</li>
<li style="vertical-align: top;">Remove from the flame and let the mixture cool completely.</li>
<li style="vertical-align: top;">Add chilli powder and cumin seeds and store in a sterilised glass jar.</li>
<li style="vertical-align: top;">Store upto 1 year in cool dry place.</li>

<li><span style="font-family: Courier New, Courier, monospace;">Use Ladwa, a round variety of raw mangoes available at some vegetable vendors or any other raw mango variety if these are not available.</span></li>
<li><span style="font-family: Courier New, Courier, monospace;">If overcooked, the chunda mixture will crystallise the following day.</span></li>
<li><span style="font-family: Courier New, Courier, monospace;">In that case, take ¼ cup of grated raw mangoes and add the prepared chunda to the mangoes little by little (2 tablespoons at a time).</span></li>
<li><span style="font-family: Courier New, Courier, monospace;">Stir continuously using a spoon or a whisk till the entire mixture is dissolved. Repeat step 3 of the above recipe.</span></li>
<li><span style="font-family: Courier New, Courier, monospace;">If the mangoes are too sour you, may need to add extra sugar at step 2.</span></li>
<li><span style="font-family: Courier New, Courier, monospace;">VARIATIONS :</span></li>
<li><span style="font-family: Courier New, Courier, monospace;">KESAR ELAICHI MANGO CHUNDA</span></li>
<li><span style="font-family: Courier New, Courier, monospace;">Use 1 teaspoon each of elaichi powder and khus khus and a few strands of saffron.</span></li>
<li><span style="font-family: Courier New, Courier, monospace;">Use the above ingredient in place of turmeric (haldi) powder, chilli powder and cumin seeds for the above recipe.</span></li>

<li style="vertical-align: top;">Remove the pan from heat, add fennel seeds and raw mango.</li>
<li style="vertical-align: top;">Add the chilli powder, turmeric powder, mustard seeds and salt to taste.</li>
<li style="vertical-align: top;">Put again on flame and mix well.</li>
<li style="vertical-align: top;">Add the jackfruit and mix well so that mango is well incorporated in jackfruit.</li>
<li style="vertical-align: top;">Stir for 2 minutes.</li>
<li style="vertical-align: top;">Let it cool before transferring it into a glass bottle.</li>

<span style="font-family: Courier New, Courier, monospace;">किसी बर्तन में 1 लीटर पानी ले लीजिये या इतना पानी जिसमें सारे कटे हुये चिप्स आसानी से डूब सकें, पानी में फिटकरी मिला कर घोल लीजिये. पानी में फिटकरी मिलाने से आलू के चिप्स का कलर बहुत अच्छा आता है. यदि फिटकरी उपलब्ध न हो तो फिटकरी की जगह एक टेबल चम्मच सिरका भी डाला जा सकता है, आलू के चिप्स काट कर पानी में डुबा कर, आधा घंटे के लिये रखे रहने दीजिये.</span></div>
